Ikedo Ramen at Carle Place at 19 Old Country Road will have its grand opening in late February 2023.

It marks the second location on Long Island for the restaurant, which touts its authentic Japanese cuisine, according to the website.

There are several appetizers on the menu, each with homemade sauces. These include takoyaki, which consists of fried octopus balls with Japanese mayonnaise, aonori and bonito flakes.

Diners can also choose from several salads, stir-fries and curries.

But as the name suggests, the main attraction is the ramen. Made with “rich and opaque” pork bone broth, customers can design their own bowls, with more than 15 different toppings to choose from, the website says.

Customer favorites, based on their cry Pages, including tonkotsu ramen, feature char siu pork belly, minced pork, fish cakes, a soft-boiled egg, bamboo shoots, black fungus, scallions and black garlic oil in homemade tonkotsu broth.

Vegetarian options include shoyu ramen, made with vegan noodles, avocado, corn, cherry tomatoes, cauliflower, enoki mushrooms, spring vegetables, lime, fried onions, and sesame oil, in a vegan soy broth and drizzled with yuzu dressing.

In the months since it opened, Ikedo Ramen has garnered plenty of positive reviews from satisfied diners.

“This ramen place in Carle Place blew my mind!” Sharon L. of Brooklyn wrote on Yelp.

“Ikedo has almost all the ingredients for a good ramen: the broth is flavorful, the noodles are springy and cooked to perfection, and the toppings are plentiful.”

Shamik M of Garden City was equally impressed after ordering spicy tonkatsu, gyoza, tempura udon and fried chicken.

“Every piece of chicken is huge!” he wrote on Yelp. “The udon noodle soup had a nice smoky benito flavor and the tonkatsu was great with black garlic oil on top. Will return!”
